Silver skin (or silverskin) is a tough, shiny, silvery-white membrane of connective tissue (epimysium covering on muscle) that runs along the side of a pork tenderloin. Because silver skin does not break down or melt during cooking, it becomes extremely chewy and unpleasant to eat, making it necessary to remove it before roasting, grilling, or slicing into medallions (approx. 1-inch thick meat slices).
Pork tenderloin rub is a mixture of dried herbs, spices, sugar, and salt massaged or layered on the meat before cooking to add flavor and create a crust. Common ingredients include smoked paprika, garlic powder, brown sugar, cumin, rosemary, and thyme. Cinnamon is good, too. The rub is applied after patting the meat dry and often after coating it in oil.
